For one, they wear out (can't see that), but... They also get broken. That o-ring? It serves double duty sealing the hot from the cold side - it is also the seal that stops the housing from leaking (no gasket). I didn't take that off BTW. It was so swollen, that when I pulled the t-stat out, it just fell off. And yes, it came out in all those chunks - no dismantling required! Not good.
