I was wondering if the experts could give me any ideas about how much power I need/want. The sub I am powering has '300W RMS' and '600W peak power' Now, my question is am I interested in the amps RMS power or its BRIDGED RMS power? But that is the best I can answer without more info. How much ohms is your sub, 8, 6, 4, dual 4 ohm...etc. Info about the amp or amps you lookin at, and maybe what kine sub you have. If you got a tight budget and just want more watts per dollar and you have a 4 ohm speaker or higher then probably a bridgeable amp might be the better deal, if your sub is dual 4 ohm then it might be better to get a cleaner single output amp, like a class D.
